Being fourth of the largest food crop in the world, potatoes also happen to be one of the most popular vegetables around. These starchy crops are a favorite among the young and old alike. It’s mild taste and texture makes it a good candidate for many different kinds of dishes ranging from salads to casseroles and fries.
Available all year round, potatoes make a great part of any menu. As with any vegetable that is cooked the traditional way, essential vitamins and nutrients are lost due to the breakdown when exposed to too much heat. Sous vide is an excellent way to cook potato dishes without having to sacrifice the nutrients in it. The low temperatures in sous vide ensure that all the important vitamins and minerals stay intact during cooking.
Additionally, using this method will also ensure that potatoes are cooked perfectly each time. It is common to often have potatoes that are cooked halfway through, but still raw on the inside. In addition to the low temperatures, slow cooking for an extended time will make sure that the potatoes get cooked uniformly all the way through.
Potatoes cooked sous vide style may be sliced thinly, cubed or even be used whole (depending on size). Likewise they may be skinned or left with the skin on, depending on what a recipe calls for. These are held at 183°F or 83.9°C for 30 to 60 minutes depending on how soft or firm they need to be. It may simply be seasoned with salt and pepper or have herbs and spices included during cooking.
Sous vide cooked potatoes are highly versatile and can be used in many different ways. These are perfect for traditional recipes such mashed potatoes, chowder and gratins. It may also be used for much loved French fries, croquets, hash browns or even on its own as a side dish.
This is a unique mustard-vinegar potato salad which has a tartness not found in the typical mayonnaise based potato salads. The vinegar also helps this dish to complement fattier main courses like ribeye or duck breast. The sous vide potatoes turn out nice and tender and always perfectly cooked.
